
Welcome to another day of my yummy, (mostly) healthy eats!

Breakfast: Tim’s tea, instant oats (ran out of the real stuff) with chia seeds added
Snacks: apple, egg white*, lemon greek yogurt (mmmm)
Lunch: lentil quinoa salad**
Snacks: grapes and (unpictured) granola bar, diet coke
Dinner: lentil taco salad** and mini spinach and feta quiche muffins***
Snack: (unpictured) chocolate pudding cup
* white only because I was having whole eggs with dinner. I try not to eat more than 2 yolks per day

Was really up to my neck at the office and my diet/meals fell wayward – had some crackers with PB for breakfast, lunch and snack. Yeah, can’t beat that eh? Anyway, dinner was stirfried noodles with French beans, soy sausage, mushrooms and seaweed.
I have been wanting to make a similar type of Egg quiche thing. They look so good! I am living off leftover lasagna this week as well as leftover chicken tacos.
Lots of variety and greens & grains! I’ve been wanting to try those cutie egg muffins – and would definitely have mine with a side of ketchup, too

The scrambled egg muffins look really good. I’m a big fan of throwing spinach into anything that will hold it and eggs are perfect.
That lentil salad sounds delicious! And I totally understand the whole egg yolk thing. Don’t they recommend for health reasons that you limit the number of yolks you consume each day?
